Grassfed Beef Tendons - We like them because they taste like fats but are literally fat free and instead high in protein. Toss them in boiling water for 5-6 minutes, allowing the scum to float to the surface. Afterwards rinse the tendons well and they're ready to be added into a stew, stock or tossed with sauces.
We'd recommend cooking these together with a Beef Brisket, Beef Cheek or Shank. Leave these ingredients simmering on low heat for a few hours for that gelatinous, fork tender texture. If you have a pressure cooker, then a quick 40mins-1 hour simmer would do the trick.
