The Ribeye Steak Experience Bundle
Have you wondered how the eating experience of Grassfed Beef evolve with age?
During our work with beef from various regions, we realised that age is a determining factor to flavour.
However it also has an inverse relationship with tenderness. While an older steak has a deeper and more complex aroma, it often becomes less tender with age.
With the experience bundle, we hope to serve you 3 types of Ribeye steaks across different age categories. Finding the perfect steak for you!
1. The Bass Straits Ribeye Steak is 30months or younger, a light pink colour that is easy on the palate.
2. The Vintage Ribeye Steak is at least 60 months old, a deep red colour with bold flavour. Best cooked rare to medium rare and sliced thinly.
3. The Matriarch Ribeye Steak is at least 108 months old, an irresistible Burgundy, speckled with marbling. We’ve aged this steak for 21 days, to improve its tenderness. Avoiding a longer age that may exaggerate its already bold flavour.
