Rubia Gallega is a breed of cattle native to Galicia. A region located at the northwestern tip of Spain. Nestled by the sea and surrounded with mountainous landscapes. Galicia is known for its misty valleys and high rainfall. Setting the landscape to produce some of the best Grassfed beef in the world, renowned for its beefy indulgence! 

In Galicia the Rubia Gallega are bred to ages as old as 15 years. This develops a signature yellowish fat cover that melts with a mere touch of your finger. While you should expect the Rubia's texture to be slightly firmer, it should still be properly tender and giving to the bite. With a complex flavour so deep coupled with a long finish. So that you taste beef with the same intensity from the first bite through to your last. If you prefer a steak with strong beefiness over a buttery wagyu finish. This could be the steak for you!

Cooking Tip: Remember to render the fat cap on top to get it crispy and the neighbours jealous. To do this, simply stand it up with the fat cap touching the pan using a pair of tongs.
