The Story: On a site sitting 1200m above sea level, the small town of Segovia is best known for their legendary Suckling Pigs (think Jose Maria) or even for their awe inspring Aqueducts stretching across the old town. Unbeknownst to many, the town of 50,000 people is also home to renown Charcutier & Iberico Jamon Producer - Prudenciala
A family tradition from the 1910, slabs of 100% Iberian Hind Legs "Pata Negra" are cured in a light mediterranean sea salt. They are then hung over 4 years in a cellar, without refrigeration or humidity controlled systems, these hams are exposed to the seasonalities of the region.
The Pigs: On the family farm in Extramadura, Iberico Pigs roam freely. With over 1 Hectare of space for each pig to forage and display their natural instincts. Fed 100% on acorn during the season, munching over 9KG of acorn daily.
The Taste: The fats melts almost immediately on your palate, leaving you with a satisfying coat around the mouth of rich lacquer.
