Imagine tender, succulent lamb shanks bathed in a rich, velvety red wine sauce, flavours that meld together in a symphony of taste.

The sous vide cooking method takes this classic dish to a whole new level, ensuring that each bite is an experience to savour. 

To create a sauce that perfectly complements the lamb shank. We use a bold Madeira red wine. The wine's rich, fruity notes meld with the lamb's earthy essence creates a sauce that's nothing short of spectacular! 

How to Prepare:

1. Add a splash of olive oil on heated pan and sear only the shank(without the sauce) for 1-2 minutes on each side until they develop a nice brown crust.

2. After searing, on low heat, pour the remaining sauce into the pan. Strain the sauce if you prefer fine and flowing sauce. 

3. Lightly stir and simmer the liquid until it reduces and thickens. You can adjust the seasoning to taste, and even add a pat of butter for extra richness. 

4. Serve and drizzle red wine sauce over.
