The Hanger Steak or Onglet (Thick Skirt) is probably the most well known. They graze the tables of many fine restaurants and taco joints here in Singapore.
Less in the lime light are the Inside and outside skirts. Long thin stretches of muscle that hangs along the inner rib. These meats while not heavily marbled, are speckled with streaks of fat - a light fat cover that further adds to the steak's flavour. The Inside and Outside Skirt Steak also has a loose muscle structure. Its jagged surface mimics the rise and fall of tiny hills and valleys. Resulting in a deceivingly large surface area - prime territory for a good marinade.
Barley fed Hanger Steak (200g): Probably the most tender amongst the 3 skirt steaks. It is situated near the tenderloin and hangs right next to the kidney. While there are always 2 pieces of every muscle on the cattle e.g. 2 ribeyes and 2 striploins. There is always only 1 piece of hanger steak. That is 700g of hanger steak on an animal weighing more than 400kg!
Wagyu Inside Skirt (250g) Marinated with Chimichurri sauce: Typically the inside skirt is the most chewy amongst the 3 skirt steaks. Hence we chose to showcase this cut as the only Wagyu steak in this experience bundle. Despite being a cut from a Wagyu, the Inside Skirt doesn't melt in your mouth. But what it lacks in tenderness, it makes up for in flavour.
Barley fed Outside Skirt Yakiniku (200g): Sometimes referred to as Harimi in Japanese yakiniku restaurants. The outside skirt has the best marbling amongst the 3 skirt steaks. Perhaps also the priciest skirt steak. Cook this on a charcoal grill or simply toss them on a pan. The outside skirt could soon become a staple at home!
The Bundle consists of 4 packages:
- 1 x 200g Barley Fed Hanger Steak
- 1 x 250g Wagyu Inside Skirt marinated with Chimichurri Sauce
- 2 x 100g Barley Fed Outside Skirt Yakiniku (frozen)
- Best cooked to medium rare or medium
- Raised without the use of Anti-biotics
- Clean Diet, Certified Never Ever Program
- Stays Fresh in the Chiller for at least 3 days from the date of delivery
- If not consumed within 3 days, please keep in freezer
- Individually vacuum packed for easy storage
- Delivered via refrigerated truck
