Where is it from?
Remember the last time you ordered a ribeye steak? The ribeye steaks consists of 2 separate muscles. Namely the "Ribeye Cap" (spinalis dorsi) and the "eye" loggissimus dorsi. The most tender and umami oozing bites from a ribeye comes from the Spinalis Dorsi. A cut seldom found on menus or butcher shops on it's own, because, you would ruin the entire ribeye set by removing just the tastiest bit.
