The Story: On a site sitting 1200m above sea level, the small town of Segovia is best known for their legendary Suckling Pigs (think Jose Maria) or even for their awe inspring Aqueducts stretching across the old town. Unbeknownst to many, the town of 50,000 people is also home to renown Charcutier & Iberico Jamon Producer - Prudenciala.
The Pigs: Cebo or De Raza symbolises an Iberico Pig that is 50-75% Iberian.
The Taste: Slightly less fatty and unctuous in flavour compared to the Bellota Jamon.
